Nana’s Chicken Soup

Ingredients:

5 quarts water
1 pound bone in skin on chicken
One large white onion
one large yellow onion
One head of garlic
Two large carrots
Three stocks of celery
Four large potatoes
One zucchini
One summer squash
1 chayote squash
1 small container of mushroom
Two tomatoes
1 lemon
Cilantro

Seasonings:

3 bullion cubes
Oregano
To bay leaves
Garlic powder
Ground cumin
Dried cilantro
Turmeric
Black pepper

Directions:

Place water into a large pot and turn on high heat.

Add chicken, onion, and garlic with 1 tablespoon of salt.

Bring to a boil for one hour. Add in all vegetables and seasonings and reduce the heat to medium and simmer for another hour.

Optional remove chicken and debone then return to pot.

Turn off heat and cool for 30 minutes. Garnish with cilantro and lemon and enjoy!
