Delicious Menudo

Ingredients

1 pound honeycomb tripe
2 pound cow feet
3 pounds pigs feet
1 Can hominy
1 onion
1 garlic head
2 lemon
1/4 cup vinegar
6 bay leaves
5 tablespoons salt
3 tablespoons beef bullion
1 tablespoons cumin
1/2 tablespoons pepper
5 chili California
5 chili guajillo

Directions

Wash your meat with hot water and soak for 30 minutes in vinegar, salt lemon juice, and lemon rinds. Add to crockpot and cover with water. Add in onions garlic and bay leaves and cook for one hour. De-stem and seed your chilies and put them in a blender with the aromatics and boiling water from the crockpot, let it sit for 20 minutes until chilies become soft then blend and add to crockpot through a sieve. Cover and cook. Add hominy one hour before Menudo is done. Garnish with cilantro, onion, and lime. Enjoy!
