Jalapeño Popper Cornbread

Ingredients:

1 package Jiffy cornbread
1 egg
1/3 cup milk
1 cup cheddar cheese
1 can diced jalapeños
1 fresh jalapeño
1/3 cup bacon bits
1 1/2 tbs bacon grease

Directions:

Poor cornbread mix into your bowl and use a whisk to break up any clumps. Add egg, milk and drained diced jalapeños. Whisk mixture gently. Add and 1 cup of freshly shredded cheddar cheese and 1/3 cup bacon bits fold in gently. Coat cupcake pan In bacon grease and scoop 1/4 cup mix into each cup. Top with one slice of jalapeño, bacon bits and cheese. Place in a preheated oven at 400° for exactly 13 minutes.
