Ingredients:
Whole chicken
1 yellow onion
2 Idaho potatoes
2 lemons
Olive oil to your liking
Seasonings:
2 tbs Black pepper
1 tbs Butter seasoning
1 tbs Corse Sea Salt
2 tbs Garlic powder
Directions
- Half your potatoes and quarter the onion and place in the bottom of your crockpot.
- Clean and dry chicken.
- Spatchcock your chicken use a sharp knife to remove spine and smash breast bone.
- Your chicken will lay flat.
- To make marinade add 2 tbs olive oil to a bowl with zest and juice of 1 lemon, salt, pepper and butter seasoning.
- Mix well and fill syringe. Inject mixture into all parts of chicken.
- Transfer chicken into crockpot directly on top of potatoes and onion.
- Lightly cover with olive oil and garlic powder.
- Cover and cook for 4 hours.
- Fill injector with dripping at the bottom of pot to inject chicken.
- Top with juice of 1 more lemon and 1 tablespoon of black pepper.
- Cover and place on high for 3 more hours. Rest chicken and enjoy!
