Slow Cooker Spatchcock Chicken

Ingredients:

Whole chicken
1 yellow onion
2 Idaho potatoes
2 lemons
Olive oil to your liking

Seasonings:

2 tbs Black pepper
1 tbs Butter seasoning
1 tbs Corse Sea Salt
2 tbs Garlic powder

Directions

  1. Half your potatoes and quarter the onion and place in the bottom of your crockpot.
  2. Clean and dry chicken.
  3. Spatchcock your chicken use a sharp knife to remove spine and smash breast bone.
  4. Your chicken will lay flat.
  5. To make marinade add 2 tbs olive oil to a bowl with zest and juice of 1 lemon, salt, pepper and butter seasoning.
  6. Mix well and fill syringe. Inject mixture into all parts of chicken.
  7. Transfer chicken into crockpot directly on top of potatoes and onion.
  8. Lightly cover with olive oil and garlic powder.
  9. Cover and cook for 4 hours.
  10. Fill injector with dripping at the bottom of pot to inject chicken.
  11. Top with juice of 1 more lemon and 1 tablespoon of black pepper.
  12. Cover and place on high for 3 more hours. Rest chicken and enjoy!
